Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce Outstanding Natural Spirits in one of the most beautiful regions in the world. The distillery opened its doors in 2014 and is the first full-scale distillery within the Cotswolds – a designated Area of Outstanding Natural Beauty. From their single malt whiskies to gins and liqueurs, everything they make is about quality and flavour above all else.
It all started back in 2014, when founder, Daniel Szor, a native New Yorker, moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. A dedicated whisky fan, Dan saw the fields of golden barley around his house in the Cotswolds and had a brainwave ‘I suddenly thought, there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’
Where is Cotswolds Distillery?
Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014. Located just outside the beautiful village of Stourton, the distillery welcomes over 30,000 people to their distillery each year. In 2019, the distillery opened a visitor centre which includes a shop and café with a window-view of one of the on-site distilleries.
At the start of January 2023, a new whisky distillery was commissioned on-site, allowing the Cotswolds Distillery the capacity to quadruple their production of whisky, making them the largest producer of English Whisky.
Drawing inspiration from their surroundings, the Cotswolds Distillery is committed to supporting and celebrating the Cotswolds AONB. They use locally grown barley to make their whisky and they believe in the importance of traditional craftmanship. Despite the typical botanicals used in gin-making not being native to the UK (e.g., juniper), Cotswolds Distillery still strive to support and celebrate their surroundings by using locally grown lavender in their Dry Gin. They also produce a Wildflower gin range as well as a Hedgerow Gin using locally grown botanicals and fruit. From start to-finish, everything is controlled by hand and timed to perfection to ensure that the spirits produced are of the highest quality and flavour.
Visitors can gain an in-depth understanding of how the Cotswolds Distillery produces its range of Outstanding Natural Spirits by booking a Tour and Tasting which run 7 days a week. Visitors are taken around the distilleries and cask warehouse, learning how the Cotswolds Distillery’s award-winning spirits are crafted and are able to see (and smell!) the processes in action. At the end of the tour, visitors can sample the range of spirits and liqueurs and Drivers Drams’ are provided for the designated drivers on the day. The distillery also hosts monthly Cocktail Masterclasses at their Stourton site, as well as monthly Whisky Blending and Gin Blending Masterclasses, which are also held at their Broadway and Bourton-on-the-Water shops.
